Marinated portions of croc fried and nestled on a summer bush salad served with lime aioli & Alpine pepper sauce

Kangaroo Kabab

Skewers of grilled Kangaroo peices with mixed vegetables on a Bush Rissotto

Emu Spring Rolls

Slow roasted Emu mixed with bush spices and wrapped in spring roll pastry and fried with Illawarra plum sauce and bush salad

Barramundi

Grilled barramundi with lemon myrtle and forest anise aioli on top of smashed chats and roma tomatoes with an avocado salad

Veal Cutlet

Pan fried & topped with wild mushrooms, wattleseed and balsamic, nestled on spicy kumera mash and sauteed witlof

Emu Stack

Pan fried medium rare Emus tacked between char grilled vegetables; papadum’s and mushrooms in a red wine jus with kumera pieces and rocket
